Goat Cheese with Gingersnaps

This is my friend, G's, recipe, and it is a marvel of delicious flavors--salty, tangy, sweet, and herbal. Who would've thought to pair goat cheese with gingersnaps? Totally brilliant. Anyway, this is easy to prepare and makes an especially nice presentation for a Christmas party.

Goat Cheese with Gingersnaps
1 log goat cheese
Basil leaves
Toasted pine nuts (toast in 350 degree oven until light brown)
1/4 cup balsamic vinegar
1/4 cup honey

Chop basil and roll goat cheese in basil until log is covered. Sprinkle toasted pine nuts over. Mix balsamic vinegar and honey, then drizzle over top. Serve with gingersnaps.
